Westchester, IL — Demonstrating cost savings from reducing or replacing gelatins, Ingredion, Inc. is introducing an online savings calculator for candy manufacturers.
The company developed the tool, available at foodinnovation.com/foodinnovation/ to showcase its starch-based gelatin replacements, which can maintain chewy textures and glossy appearances, Ingredion reports, adding that through replacement, manufacturers have the ability to reach consumers who follow vegetarian, kosher and halal diets.
In addition, using a replacement might increase shelf life and prevent stickiness and melting, according to the company.

For example, candymakers that use approximately three million pounds of gelatin in gummy candies can save up to $500,000 annually by replacing all gelatin in formulations, or $375,000 per year with a 75 percent replacement, Ingredion reports, noting figures are based on ingredient costs at the time of publication.
