Rousselot Debuts Gelatin Agents

Son, Netherlands — Four varieties of gelatin-based solutions are available under Vion N.V.’s Rousselot brand. AcidoGel is a gelling agent used for the manufacture of stable acid marshmallows; ResistaGel ensures product stability in warm conditions; NeutralGel is used to texturize, mimic fat, promote flavor release and improve stability; and EmulsiGel is a clean label ingredient that emulsifies and stabilizes in oil and water mixtures. “The Synergy Systems are composed of different types of gelatin, or a specific gelatin and other ingredients that work synergistically — the functionality of gelatin and the other ingredients are boosted when combined,” the company explains.
