Bethlehem, PA — Registration is under way for the 68th Annual Production Conference of the Pennsylvania Manufacturing Confectioners’ Association (PMCA), to be held April 14 through 16 at the Lancaster Marriott at Penn Square and the Lancaster County Convention Center in Lancaster, PA, the organization reports.
The Basics and Beyond Seminar, “Using Dairy in Confections,” features technical sessions led by experts from The Pennsylvania State University extension program; Ferrara Candy Co., Inc.; Mettler-Toledo; The Hershey Co.; Ingredion, Inc.; Sensient Colors, LLC and others. Topics include developing and implementing a foreign material prevention and detection program, high-potency sweeteners in confectionery, using dairy flavors and fruit and fruit ingredients in candy formulations, global food coloring regulations and PMCA committee updates.
In addition, NCA Director of Scientific and Regulatory Affairs Laura Shumow will present a regulatory update for the confectionery industry.
The Tuesday evening keynote address by Big Tree Farms, Inc.’s Frederick Schilling will explore the concept of sustainable transformation.
In addition to the seminar program, registrants have access to more than 100 exhibitors on the show floor, live confectionery demonstrations, a special exhibit titled “From Cow to Candy,” and the reception and banquet. PMCA members also can register for the pre-conference golf tournament.
