Chocolate Pecan Icing

This recipe yields about 3 cups of icing and pairs well with Texas style chocolate cake.


1 stick (4 ounces) margarine softened
1/4 cup unsweetened cocoa powder
1/3 cup milk
1 box (1 pound) powdered sugar
1 teaspoon vanilla
1 cup chopped pecans


  1. In a medium bowl, beat together margarine, cocoa and milk with an electric mixer on medium speed until light and fluffy, about 2 minutes. 
  2. Add powdered sugar and vanilla and beat on high speed until well blended. 
  3. Stir in pecans.
