Peterborough, UK — New to its line of small, flexible production systems for functional gummies and confectionery markets, Baker Perkins Ltd. is launching JellyCook, a small batch cooker for gummies, according to the supplier.
The system brings the benefits of starch-free production and can handle products that use gelatin, pectin, carrageenan or blends as gelling agents, Baker Perkins reports. The semi-automatic JellyCook can produce up to 50kg per hour, or 100kg/hour for its high output model featuring two cookers.
The equipment features an intelligent control system that includes an adaptive weighing system, which guides operators through the process of making each batch. Instead of relying on set points, JellyCook machines recalculate ingredient additions in real time to match quantities, ensuring consistency between batches. It also enables precise control over the amount of active ingredients, colors and flavors added at the end of the cook cycle, the company reports.
Baker Perkins will be highlighting JellyCook systems during ProSweets, taking place February 2 to 5, in Hall 10.1, booth B040.
