Shanghai — Callebaut, the Belgian chocolate brand of the Barry Callebaut Group, will release ruby chocolate RB1, the “first expression” of ruby chocolate designed for artisans and chefs, in China this September, the supplier reports.
The move helps bolster the company’s gourmet sector, which meets the needs of the fast-growing segment of professional users of chocolate in China, according to Barry Callebaut. The chocolate maker reports its gourmet sector in China has doubled in volume during the past five years.
“Ruby is the most exciting thing to happen in the chocolate industry in decades,” says Pascale Meulemeester, vice-president for global gourmet. “We are proud to offer this fourth category of chocolate — after milk, dark and white — under the Callebaut brand and our Finest Belgian Chocolate range. Offering ruby chocolate to artisans and chefs in China will unleash a wave of creativity that will lead to exciting new products and concepts for people to enjoy.”
The pink-hued chocolate, which was introduced this past fall, has berry notes, but the supplier reports no fruits, berry flavors or colors are added during production. Made with the ruby cocoa variety, the chocolate is not bitter, milky or sweet, delivering berry-fruitiness and a smooth mouthfeel.
