Zurich, Switzerland — Ruby chocolate is now broadly available in the U.S. as well as Canada, Barry Callebaut AG reports.
Ruby chocolate has a unique pink color and a sensory profile with fruity, berry notes and “luscious smoothness,” which is made from pure cocoa beans selected for their unique Ruby properties without adding flavors or colors, according to the supplier.
Barry Callebaut reports it is still working with the FDA on test marketing for Ruby as a new chocolate product in the U.S., with the ultimately goal of establishing a new standard of identity that encompasses the pink-hued chocolate’s distinct sensory profile. While the regulatory issues are being worked out, the chocolate will be launched in the U.S. as Ruby couverture.
“Fueled by the overwhelming consumer response around the globe, Barry Callebaut collaborated with a small group of pioneering artisans during the past six months to soft launch Ruby in the U.S. marketplace,” says Peter Boone, president and CEO of Barry Callebaut Americas. “The sales of those consumer products have been very strong. As a result, to help ensure that our business partners have access to the product, we feel that now is the time to take the next step in our global roll-out campaign, and introduce Ruby to the entire North American market.”
Barry Callebaut will officially launch Ruby in the U.S. at a private chef-led event developed for artisan chocolatiers in Miami on May 20, while the supplier will use the Sweets & Snacks Expo to further introduce Ruby to the industry. Both events will feature chef demonstrations, product application sessions and sampling.
